Gluten-Free Italian Technique Intensive

This 3.5-hour hands-on workshop is designed for those who want to deepen their gluten-free technique — whether for medical necessity or serious home baking.

In this session, we’ll approach three classic Italian dishes entirely through a gluten-free formulation lens.

What You’ll Do

• Mix and evaluate your own gluten-free flour blends
• Build structured fresh pasta without wheat
• Develop lift and crumb in gluten-free focaccia
• Assemble a stable, balanced tiramisu cake

This is not a demonstration class.
You will be actively preparing each component.

What You’ll Learn

• How gluten-free flour systems behave
• How to build elasticity and structure without gluten
• How to prevent density and gumminess
• How ingredient selection impacts final texture
