Zucchini Pizza Boats

4 Medium Zucchini

1 small onion

1 tbsp extra virgin olive oil

Marinara Sauce

1 Cup of Ricotta Cheese

1 1/4 cup Mozzarella Cheese Divided

1/4 c Parmesan Cheese

1 tsp Italian Seasoning

1/3 cup mini pepperoni pieces

chopped basil for garnish

Using a spoon remove flesh from zucchini and place the shell into a baking dish. Oven should be set to 450 degrees.

Finely Chop Zucchini Flesh and add in grated onion.

Add oil to hot skillet and cook for 5 minutes. Transfer to a medium bowl and add Marinara, ricotta, 3/4 c Mozzarella, Parmesan and Italian Seasoning. Stir well and add salt & pepper to season.

Divide Mixture among the zucchini boats and top with remaining mozzarella.

Top with Pepperoni.

Bake for 20-30 minutes and garnish with Parmesan and basil.
